Green Tomatoes
Don't throw out those Green Tomatoes!
Here's a recipe for a chutney that's delicious served with chicken, pork or cheese.
Substitute raisins with any dried fruit you like.

Green Tomato Chutney
Combine the following in large saucepan:
1 seeded chopped lemon
1 skinned chopped clove garlic
5 cups firm peeled chopped green tomatoes
2 1/4 cups brown sugar
1 1/2 cups raisins
1/4 cup fresh gingerroot, peeled and chopped
1 1/2 teaspoons salt
2 cups cider vinegar
Simmer at least two hours or until the sauce has thickened, stirring frequently.
Put the boiling hot chutney into hot sterilized jars and seal. For pints, process 15 minutes in a boiling water bath.
